Baked Pasta with Ground Turkey

This was good. It was pretty simple to make. I always have to make baked dishes in two separate dishes because my husband refuses to eat fake cheese. I use Daiya brand vegan cheese and I love it. It’s free from mostly everything!

Ingredients
  1. 1/2 tablespoon olive oil
  2. 1 yellow onion, diced (I omitted)
  3. 1 pound ground turkey meat
  4. salt and freshly ground pepper, to taste
  5. 3 to 4 garlic cloves, minced
  6. 1 can (14.5 ounces) Organic Diced Tomatoes, undrained
  7. 1 can (15 ounces) Organic Tomato Sauce
  8. 1 teaspoon Italian Seasoning
  9. 1/2 teaspoon dried basil
  10. 3 cups water
  11. 1 box (12 ounces) Gluten Free Penne Pasta
  12. 1/2 cup Coconut milk (or any milk of your choosing)
  13. 1/4 cup grated Parmesan cheese
  14. 1/2-cup shredded mozzarella cheese

Instructions
  1. Preheat oven to 450 degrees.
  2. Heat the olive oil in a large stovetop and oven safe nonstick skillet.
  3. Add onions and turkey meat and season with salt and pepper.
  4. Cook for 4 to 5 minutes, stirring occasionally, until meat is browned on all sides.
  5. Add garlic and continue to cook for 1 more minute.
  6. Stir in the diced tomatoes and tomato sauce and season with Italian Seasoning and dried basil.
  7. Reduce heat to medium-low and simmer for 8 minutes.
  8. Add the water and pasta.
  9. Stir to combine and cover with a lid.
  10. Increase heat and continue to cook for 12 to 15 minutes, stirring frequently to avoid burning, until pasta is tender and cooked al dente.
  11. Remove from heat and stir in the milk and parmesan.
  12. Taste for seasonings and adjust accordingly.
  13. Sprinkle mozzarella over the top and transfer to oven. (I put the pasta in casserole baking dishes and placed them in the oven.)
  14. Bake for 10 to 12 minutes, or until cheese is melted.
  15. Remove from oven and serve.

  1. This was very easy to prepare and cook. This is the type of recipe that you can add your ingredients to have the taste you prefer. It is also quite healthy. I found that using green onions instead of yellow onions gave it a more mellow taste. Instead of using noodles, I used macaroni shells.
    I also made a pizza derivative on another occasion by lining the skillet (before putting it into the oven) with wheat grain hot dog buns and spreading the ingredients atop. On another occasion for my pizza choice, I used tortilla shells and instead of baking it for 10-12 minutes, I baked it for 5-6 minutes. Quite delicious. I offered sour cream and jalapeño peppers on the side.
