Cheesy Taco Pasta

I enjoy this dish a lot. The first time I made it I added ground turkey to it. This time I made it vegetarian. The only annoying part about making this dish for me is that I need to make mine in a separate pot than my husband’s since I use real cheese for his and vegan cheese for mine. He refuses to eat my “fake” cheese. This recipe is easy and a good one for kids to enjoy. I added zucchini but you can add whatever vegetables you want to it!

Ingredients
  1. ½ teaspoon salt
  2. Pinch of black pepper
  3. 1 ounce packet taco seasoning
  4. 2 cups water
  5. 1 cup jarred mild salsa
  6. 8 ounces uncooked pasta (I used GF penne)
  7. 1½ cups shredded cheese
  8. chopped zucchini
  9. chopped cilantro

Instructions
  1. Boil pasta according to the package.
  2. Once the pasta is cooked, drain it. Then add it back to the pot with two cups of water.
  3. Add salsa and taco seasoning packet. Mix well.
  4. Add the zucchini and mix
  5. Stir in cheese until melted
  6. Serve and top with cilantro
