Matzo Eggs

A coworker gave me a box of gluten free matzo because I have never seen it gluten free before. She told me about mixing it with eggs and frying them. I tried it and loved it! I will be making this dish until the box of matzo are gone.

Ingredients
  1. 4 Eggs
  2. 1-2 Matzo
  3. 3 Tablespoons of water
  4. Sea salt
  5. Coconut milk
  6. Butter

Instructions
  1. Whisk eggs in a bowl with water and coconut milk (I use a little less than 1/4 cups of milk).
  2. Add crushed up matzo and mix well.
  3. Let sit for 15 minutes.
  4. Add butter to a pan and melt.
  5. Pour the egg mixture into the pan and scramble.
  6. Cook until it's cooked through.
  7. Serve with a side of avocado.
