Cheesy Meatloaf Muffins

These cheesy meatloaf muffins are easy to make, bake fast, and are delicious. These are great for kids. Pair them with some pasta and you have a complete meal. You can use turkey, beef, pork, whatever meat you’d like. Instead of buying a block of cheese and cubing it, I bought string cheese and chopped that into pieces.

Ingredients
  1. 1 pound ground turkey
  2. 0.75 cup dry breadcrumbs
  3. 0.75 cup milk
  4. 1 teaspoon garlic powder
  5. 1 teaspoon onion powder
  6. 0.5 to 1 teaspoon salt
  7. 2 eggs
  8. 6 ounces Mozzarella cheese, cubed

Instructions
  1. In a large bowl, combine all but cheese and mix well.
  2. Fill wells of muffin tins that have been sprayed with cooking oil with meatloaf mixture, and place a cube of cheese in the center of each meatloaf.
  3. Completely cover with a bit more meatloaf mixture.
  4. Bake at 350F for about 20 minutes, or until done.
  5. Remove from muffin tins, cool slightly, and serve.
