Crock Pot Cowboy Casserole

This was delicious. It’s a super easy crockpot dish that everyone will enjoy! The original recipe calls for pork but I substituted it with ground turkey. Also, I cooked it on high for 4 hours.

Ingredients
  1. 1 onion, chopped
  2. 1 clove garlic, minced
  3. 2 pounds ground turkey
  4. 6 medium potatoes, cut into small cubes
  5. 1 can red kidney beans, drained and rinsed
  6. 1 can diced tomatoes w. Green chilis
  7. ¼ cup water
  8. Salt and pepper to taste
  9. 4 oz shredded cheddar cheese

Instructions
  1. 1. Chop onion and mince garlic.
  2. 2. Brown turkey, add salt and pepper to taste, and drain
  3. 3. Layer potatoes on bottom of 6 quart crock pot, add chopped onion and garlic.
  4. 4. Add turkey, beans, and tomatoes
  5. 5. Pour water in crock
  6. 6. Cover and Cook on low for 7-8 hours
  7. 7. Sprinkle shredded cheese in last 15 minutes, cover crock, and serve after cheese melted
