Tomato Basil Turkey Meatloaf

This turkey meatloaf is both whole 30 and paleo. It was juicy and delicious. The original recipe calls for basil but I substituted the basil for spinach. I cannot wait to make this again!

Meatloaf
  1. 1 pound ground turkey
  2. ¼ cup almond flour
  3. 2 tablespoons tomato paste
  4. 3 tablespoons chopped fresh spinach
  5. 1 egg
  6. 1 teaspoon garlic powder
  7. 1 teaspoon salt
Topping
  1. 2 tablespoons tomato paste
  2. ¼ cup chopped tomatoes
  3. 1 tablespoon apple cider vingear
  4. 1 tablespoon chopped basil
  5. Pinch of salt

Instructions
  1. Preheat oven to 400 degrees.
  2. In a bowl combine turkey, almond flour, 2 tablespoons tomato paste, basil, egg, garlic powder and 1 teaspoon salt. Mix until evenly combined.
  3. Pour mixture into a loaf pan. Place chopped spinach on top of mixture.
  4. In a small bowl combine 2 tablespoons tomato paste, chopped tomatoes, apple cider vinegar, 1 tablespoon of basil and pinch of salt.
  5. Spoon this mixture over the spinach and spread evenly over the top.
  6. Bake for 30 minutes.
