5 Ingredient Vanilla Almond Snowball Cookies

These were very simple to make. I made them gluten and dairy free by using gluten free flour and dairy free butter but the original recipe doesn’t call for that. It is vital that you do not over bake these because they will burn. Do not over cook them and they will turn out delicious.

Ingredients
  1. 1 cup almonds, finely chopped
  2. 1 cup (2 sticks) unsalted butter, softened
  3. 1 cup powdered sugar, divided
  4. 2 teaspoons vanilla extract
  5. 2 cups all-purpose flour

Instructions
  1. Preheat oven to 350 degrees.
  2. Place chopped almonds on a baking sheet and toast for 3 to 5 minutes in preheated oven. Remove from oven and set aside to cool.
  3. While the the nuts are cooling, beat together the butter, 1/2 cup powdered sugar, and vanilla in a large mixing bowl.
  4. Add flour to butter mixture in two additions, mixing until just combined after each addition.
  5. Stir in the toasted almonds by hand.
  6. Use a small cookie scoop to portion cookie dough and then roll dough into 1″ balls.
  7. Place cookies on a lined baking sheet.
  8. Bake for 14 to 16 minutes, or until the bottom edges of the cookies just begin to brown.
  9. Remove cookies from oven and let cool for 5 minutes.
  10. Roll warm cookies in the remaining 1/2 cup powdered sugar, and place on a wire rack to cool completely.
