Lemon Butter Chicken

This dish wasn’t meant for the crockpot. But because I didn’t feel like actually cooking, I used the ingredients and came up with my own crockpot recipe. Did it turn out well? Yes!

Ingredients
  1. 8 bone-in, skin-on chicken thighs
  2. 1 tablespoon smoked paprika
  3. Kosher salt and freshly ground black pepper, to taste
  4. 3 tablespoons, divided
  5. 3 cloves garlic, minced
  6. 1 cup chicken broth
  7. 1/2 cup heavy cream (I used coconut milk)
  8. 1/4 cup freshly grated Parmesan
  9. Juice of 1 lemon
  10. 1 teaspoon dried thyme

Instructions
  1. Place the chicken thighs in the crockpot.
  2. Add the chicken broth, then the coconut milk or heavy cream.
  3. Add the butter and try to spread on each piece of chicken.
  4. Add the rest of the ingredients.
  5. Cook on low between 6-7 hours.
