Creamy Tuscan Garlic Chicken

This was so good. I couldn’t believe how easy it was to make! I substituted the heavy cream for lite canned coconut milk. This is a keto friendly meal (minus the riced cauliflower).

Ingredients
  1. boneless skinless chicken breasts, thinly sliced
  2. 2 Tablespoons olive oil
  3. 1 cup heavy cream (or coconut milk)
  4. ½ cup chicken broth
  5. 1 teaspoon garlic powder
  6. 1 teaspoon italian seasoning
  7. ½ cup parmesan cheese
  8. 1 cup spinach, chopped
  9. ½ cup sun dried tomatoes (I omitted because I didn't have them)

Instructions
  1. In a large skillet add olive oil and cook the chicken for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center.
  2. Remove chicken and set aside on a plate.
  3. Add the heavy cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese. Whisk until it starts to thicken.
  4. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt.
  5. Add the chicken back to the pan.
  6. Serve over riced cauliflower or pasta.
