Keto Chicken Sandwich Recipe

I was so pleased with how this sandwich turned out! I was a little worried about the bun in a mug, but it came out great and delicious! This recipe is actually really simple to make. It’s keto and paleo friendly.

  1. For the chicken
  2. Thin sliced chicken breasts
  3. 1 egg, whisked
  4. 1 teaspoon garlic powder
  5. 1/4 teaspoon paprika
  6. salt and pepper
  7. Avocado oil or olive oil
  8. For the Italian Grain-Free Bread (makes 1 bun)
  9. 1/3 cup almond flour
  10. 1/2 Tablespoon (1g) Italian seasoning
  11. 1/4 teaspoon garlic powder
  12. 1/2 teaspoon baking powder
  13. 1/8 teaspoon salt
  14. 1 egg, whisked
  15. 2 and 1/2 tablespoons butter or ghee, melted

  1. Preheat oven to 400 degrees.
  2. Place all the bread ingredients into a mug and mix well.
  3. Place the mug into the microwave and microwave on high for 90 seconds.
  4. Let the bread cool for a few minutes and then pop out of the mug and slice into 2 slices.
  5. Place the slices onto a baking tray and toast in the oven for 5 minutes.
  6. Make the coating for the chicken pieces by mixing together the egg, garlic powder, paprika, salt and pepper.
  7. Place 2 tablespoons of oil into a frying pan.
  8. Dip each piece of chicken into the egg mixture and then place into the frying pan.
  9. Fry until the outside of the chicken turns golden and then chicken is completely cooked.
  10. Place the chicken pieces on a plate.
  11. Put the sandwiches together.
