Crock Pot Chicken and Broccoli Teriyaki

I have recently been making a lot of crockpot dishes. This one was very good. It’s a healthier take on chicken and broccoli.

Ingredients
  1. 2 Chicken Breasts
  2. 2 cups of broccoli, cut up
  3. 1 1/2 cup chicken broth
  4. 3/4 cup soy sauce (I use GF reduced sodium soy sauce)
  5. 1/2 cup brown sugar
  6. 3 garlic cloves, minced
  7. 1/3 cup diced onion
  8. 1 teaspoon ground ginger
  9. 1/4 cup water mixed with 3 tablespoons of cornstarch

Instructions
  1. Combine broth, soy sauce, brown sugar, garlic, onion and ginger and mix.
  2. Put chicken and broccoli in crockpot and pour the mix over the chicken.
  3. Cook on low for 4 hours.
  4. When the chicken is cooked, take it and the broccoli, out of the crockpot.
  5. Add the water and cornstarch mixture to the sauce in the crockpot and let it simmer and thicken.
  6. Meanwhile, shred the chicken with a fork.
  7. When the sauce is thick, pour the chicken and broccoli back into the crockpot and mix.
