Slow Cooker Garlic Chipotle Lime Chicken

 

This crockpot dish is easy to make and tastes really good. It’s actually not spicy. I believe that by adding the sugar, lime juice, and vinegar it helps to cool down the spice.

Ingredients
  1. 1 ½ lb chicken breasts
Sauce Ingredients
  1. ⅓ cup tomato sauce
  2. 2 tbsp olive oil
  3. 2 cloves of garlic
  4. 2 tbsp mild green chilies, canned
  5. 1 tbsp apple cider vinegar
  6. 3 tbsp lime juice
  7. ⅓ cup fresh cilantro
  8. 1 ½ tsp of palm sugar (or whatever sugar you want)
  9. ½ tsp to 1 tsp ground chipotle powder
  10. 1 tsp sea salt
  11. ¼ tsp black pepper

Instructions
  1. In a food processor or blender, add all the sauce ingredients and pulse until smooth.
  2. In a slow cooker on high or low heat add chicken breasts.
  3. Pour the sauce over the top of chicken.
  4. Cook for 4 to 6 hours on high or 6 to 8 hours on low.
