This could feed an army. Seriously. If you’re looking for a dish with a lot left over, this is your dish. Or you could make this dish for a party and serve it with lettuce wraps or taco shells. It was tasty. I used pineapple chunks instead of crushed pineapple but either works!
This turned out really well. It’s a healthier take on a traditional Chinese stir-fry dish. You can add whatever vegetables you want to it. I stuck with only broccoli. You could even substitute the chicken with shrimp or beef.

Not only did this smell delicious, it tasted delicious. It is a super easy recipe to make if you use already cooked chicken. You can cook the chicken beforehand or buy the chicken precooked. The original recipe called for shrimp, but since I’m allergic I substituted chicken instead.

SOOOO GOOD! I loved this, but I love anything made with eggs really. I will make this again. It’s super easy. Only thing is, they should look like pancakes and mine fell apart. I will definitely have to perfect this.
This was so simple to make and delicious. It should be served hot but my husband and I ate it cold and it was really good. This is perfect to make for a party as an appetizer.
I never had fried rice before because I do not like rice. When I am across this recipe, I had to make it. It’s fried rice without the rice because you substitute it with quinoa–which I love! It’s my go to dish. My husband loves it! This is a much healthier alternative to take-out Chinese fried rice.
