Turkey Meatloaf Parmigiana

I wanted to make turkey meatballs, but when you have an almost 1 year that wants your constant attention…I didn’t have time to stand in my kitchen and roll meat into little balls. Instead, I took my meatball recipe and made it as a meatloaf. This is much easier. Mix the ingredients together, throw it in a meatloaf pan, bake, and boom….it’s cooked.

My husband and I love Mexican food. It’s tough to go out for Mexican because everything is covered in cheese. I like to cook different Mexican inspired dishes at home so that I can substitute the real cheese with my cheese. These tostadas are hearty. They will fill you up!

Potsticker Noodle Bowls

I’ll be honest, it was good but it didn’t turn out the way I thought it was. It was a bit bland. I could have added more tamari but then it would have been too salty. I’ll have to try making this again and see how I can make it better.

Easy Cheeseburger Pie

This does not look very appetizing but it tasted good. I want to make it again and change a few things to the instructions. Next time instead of putting the cheese on the meat and then topping it with the bisquick mix, I would put the cheese on last and bake it for 5 minutes until it melts.
